Homemade Air Fryer Fish Sticks from Real Cod or Haddock
Homemade air fryer fish sticks cook at 200°C / 400°F for 8–10 minutes. Store-bought frozen fish sticks take the same time, and your own batch cooked from frozen needs 12–14 minutes.
The difference from the boxed kind is what is inside: thick fingers of real white fish instead of minced filling, in a coating you seasoned yourself.
For whole breaded fillets, see Air Fryer Cod.
Which Fish to Use
Choose a firm white fish that holds together when cut and breaded. Cod and haddock are the usual choices; pollock works and costs less. Very soft or thin fillets tend to break apart.
Cut the fish into thick fingers. Thin strips overcook before the coating has browned.

How to Make Fish Sticks
- Cut the Fish into Fingers: Pat the fillets dry and cut them into fingers about 2 cm (¾ inch) wide and 8–10 cm long. Season with salt and lemon zest.
- Set Up the Coating: Put flour on one plate. Whisk the eggs with the mustard on the second. Mix panko, paprika, garlic powder, and parsley on the third.
- Bread the Fish: Coat each piece in flour, dip in the egg, then press firmly into the panko so every side is covered.
- Spray and Arrange: Lay the fish sticks in the basket with gaps between them and spray the tops lightly with oil.
- Air Fry: Cook at 200°C / 400°F for 8–10 minutes, turning them gently after 5 minutes and spraying the second side.
- Check They Are Cooked: The air fryer fish sticks are ready when the coating is deep golden and the fish flakes easily, reaching 63°C / 145°F.
- Serve Warm: Serve straight away with lemon wedges and tartar sauce.
- Fish is cooked when it reaches 63°C / 145°F and flakes easily.
- Use firm white fish; very soft fish can break during breading.
- The mustard in the egg helps the crumbs stick and adds flavor without tasting strong.
- Always check for bones before serving to children.

Tips
Making a Freezer Batch
Bread a double batch and freeze half before cooking. Lay the sticks on a lined tray, freeze until firm, then bag them. Cook from frozen at 200°C / 400°F for 12–14 minutes, turning once. You get the convenience of a boxed fish stick with much better fish inside.
Variations
- Fish finger sandwiches: Serve in soft rolls with lettuce and tartar sauce.
- Cornflake crust: Swap panko for crushed cornflakes.
- Cajun fish sticks: Add Cajun seasoning to the crumbs.
- Salmon sticks: Use salmon fillets for a richer flavor.
Fish Stick FAQ
Storing and Reheating
Keep leftover air fryer fish sticks in the fridge for up to 2 days.
Reheat at 190°C / 375°F for 3–4 minutes. Uncooked breaded sticks can be frozen for up to 2 months.
Final Thoughts
Thick-cut firm fish, well-pressed crumbs and a spray of oil give you air fryer fish sticks that are crunchy outside and flaky inside.
