Air Fryer Pork Tenderloin – Tender, Juicy and Golden in 20 Minutes
Air fryer pork tenderloin cooks at 200°C / 400°F for 18–22 minutes, until the thickest part reads 63°C / 145°F. Give it 5 minutes to rest, slice it, and you get tender, slightly pink medallions with a dark, herby crust.
Tenderloin is one of the leanest cuts of pork, which is both the good news and the catch. It cooks fast and takes seasoning well, but there is almost no fat to protect it, so two or three extra minutes can turn it from juicy to dry. A cheap instant-read thermometer solves that problem completely, and it is the one tool this recipe really needs.
What You Need
- 1 pork tenderloin (500–700 g / 1.1–1.5 lb)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme or rosemary
- 1 teaspoon smoked paprika
- 1 teaspoon brown sugar
- 1 teaspoon salt and ½ teaspoon black pepper
Supermarket tenderloins are often sold two to a pack. If yours came that way, cook one now and freeze the other raw; it thaws overnight in the fridge and is ready for the same recipe.
Trim the Silver Skin First
Look for a thin, shiny, silvery membrane along one side of the meat. It does not melt like fat; it tightens and goes chewy in the heat. Slide a sharp knife under one end, hold that end with a paper towel for grip, and run the blade along the membrane with the edge tilted slightly upward. It comes away in long strips, and you lose almost no meat.

How to Cook It
1. Dry and Season
Pat the pork dry with paper towels. A dry surface browns; a wet one steams. Rub it with the oil, then press the mixed spices and sugar all over, including the ends.
2. Make It Fit
Most tenderloins are longer than an air fryer basket. Cut it in half crosswise so both pieces lie flat with a little space around them. Bending it into a curve leaves the inside of the bend pale and undercooked.
3. Air Fry and Turn
Cook at 200°C / 400°F for 18–22 minutes, turning the pieces over halfway so both sides get the same color.
4. Check the Temperature
Start checking at 17 minutes. Push the thermometer into the thickest part from the side and take the pork out at 63°C / 145°F. The thin tail end will be more done than the middle, which is handy if some people at the table prefer their pork without pink.
5. Rest, Then Slice
Leave it on a board for 5 minutes. The temperature rises a couple of degrees and the juices settle, so they stay in the meat instead of running across the board. Slice across the grain into 2 cm medallions.
- Pork is safe to eat at 63°C / 145°F followed by a 3-minute rest, according to current USDA guidance.
- Overcooked tenderloin dries out quickly, so begin checking a few minutes early.
- The brown sugar can darken fast near the end; if the crust looks very dark before the pork is done, drop to 190°C / 375°F.
- Keep raw pork away from ready-to-eat food and wash the board and knife after trimming.
Air Fryer Pork Tenderloin Cooking Time by Weight
| Weight | Temperature | Time |
| 400–500 g | 200°C / 400°F | 16–18 minutes |
| 500–700 g | 200°C / 400°F | 18–22 minutes |
| 700–900 g | 190°C / 375°F | 22–26 minutes |
Treat these times as a starting point. Air fryers vary a lot in power, and a small basket model will usually run hotter than a large oven-style one. The thermometer reading is what tells you the pork is ready.
Why Tenderloin Dries Out (and How to Stop It)
Almost every dry air fryer pork tenderloin comes down to one of three things. The first is simply cooking it too long, often because the recipe time was followed without checking. The second is slicing straight away, which lets the juices run out. The third is a cold, wet surface going into the basket, so the outside takes longer to brown and the middle overcooks while you wait for color. Pat it dry, check early and let it rest, and all three are covered.
Ways to Change the Flavor
- Honey garlic: marinate in 2 tablespoons soy sauce, 1 tablespoon honey and 2 crushed garlic cloves for 1–4 hours, then pat dry before cooking.
- Mustard and herb: brush with Dijon mustard and press on chopped parsley and thyme instead of the dry rub.
- Spiced: swap the thyme for ground cumin and coriander, and add a pinch of chili flakes.
Tips
What to Serve With It
Air fryer pork tenderloin goes well with roasted vegetables, apple sauce, a crisp green salad or crispy Air Fryer Roasted Potatoes. If you have one air fryer, cook the potatoes first and keep them warm in a low oven, then reheat them in the basket for 2 minutes while the pork rests.
Leftovers
Cooled slices keep in a sealed container in the fridge for up to 3 days. Leftover air fryer pork tenderloin is best cold in sandwiches or warmed gently: 2–3 minutes at 160°C / 320°F is enough. Reheating it hot and fast will dry it out.
