Airfryer Potato Recipes

Air Fryer Potato Skins Loaded with Cheddar and Bacon

Air fryer potato skins are made in three steps: bake whole potatoes at 200°C / 400°F for 30–35 minutes, crisp the scooped-out skins for 7 minutes, then melt the cheese at 190°C / 375°F for 2–3 minutes.

They are the pub appetizer of crisp potato shells filled with cheddar and bacon, finished with sour cream and chives. Crisping the empty skins before filling is what makes them crunchy.

If you just want the potato, see Air Fryer Baked Potato.

The Three Stages and Their Times

Stage Temperature Time
Baking whole potatoes 200°C / 400°F 30–35 minutes
Crisping empty skins 200°C / 400°F 7 minutes
Melting the cheese 190°C / 375°F 2–3 minutes
Reheating 190°C / 375°F 4–5 minutes

Starting from Leftover Baked Potatoes

If you already have cooked baked potatoes, skip the first stage. Halve them cold, scoop out most of the flesh leaving a thin layer, brush the skins with oil and go straight to the 7-minute crisping stage.

Cold potatoes are actually easier to scoop cleanly than hot ones, so this is a good use for leftovers.

How to Make Loaded Potato Skins

  1. Bake the Potatoes: Scrub and dry the potatoes, prick them with a fork, rub with oil, and air fry at 200°C / 400°F for 30–35 minutes until tender.
  2. Cool and Halve: Let them cool for 10 minutes, then cut in half lengthwise.
  3. Scoop Out: Scoop out the flesh, leaving a 5 mm (¼ inch) layer inside the skin. Save the potato for mash.
  4. Brush and Crisp: Brush the skins inside and out with melted butter, season with salt and garlic powder, and air fry skin-side up for 4 minutes, then flip and cook 3 minutes more.
  5. Add Cheese and Bacon: Fill each skin with cheddar and bacon.
  6. Melt the Cheese: Air fry at 190°C / 375°F for 2–3 minutes until the cheese is melted and bubbly.
  7. Top and Serve: Finish the air fryer potato skins with sour cream and chives and serve hot.
Important Information
  • Leave a thin layer of potato inside so the skins hold their shape.
  • Let the potatoes cool before scooping so you don’t burn your hands.
  • Crisping the empty skins first is what makes them crunchy.
  • Cheese is very hot straight from the air fryer; let them cool slightly.

Common Mistakes to Avoid

  • Scooping out too much potato: If you scrape down to the skin, the shells go brittle and tear. Leave about 5 mm of potato inside so they hold their shape.
  • Adding the cheese before the skins crisp: Cheese on a soft skin makes it soggy. Crisp the empty shells first, then fill and melt.
  • Using wet fillings: Watery toppings like raw tomato or too much sour cream soak into the skin. Add cold toppings only after the skins come out of the air fryer.
  • Overfilling: A heaped spoonful slides off when you lift the skin. A thin, even layer of cheese and bacon is easier to eat and browns better.
