Air Fryer Catfish – Crispy Cornmeal Crust, Southern Style
Air fryer catfish cooks at 200°C / 400°F for 10–12 minutes, flipped halfway. A seasoned cornmeal crust turns golden and crunchy while the fish inside stays flaky and moist. It tastes a lot like Southern fried catfish, but it needs only a light spray of oil instead of a pot of it.
Catfish is a forgiving fish for beginners. The fillets are fairly thick, mild in flavor and hard to dry out, and the cornmeal coating protects them even further. What makes or breaks it is the crust: it needs to stick, and it needs oil on every part of it, or you end up with pale, dusty patches.
Air Fryer Catfish Cooking Times

| Fillets, about 1.5 cm thick | 200°C / 400°F | 10–12 minutes |

| Frozen breaded fillets | 200°C / 400°F | 12–15 minutes |
| Plain seasoned fillets (no crust) | 190°C / 375°F | 8–10 minutes |
What You Need
- 4 catfish fillets (about 600 g / 1.3 lb)
- 240 ml (1 cup) buttermilk, or milk with 1 tablespoon lemon juice
- 100 g (⅔ cup) fine yellow cornmeal
- 30 g (¼ cup) all-purpose flour
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ½ teaspoon cayenne pepper
- ½ teaspoon black pepper
- Oil spray
- Lemon wedges and tartar sauce to serve
Most catfish sold in shops is farm-raised and has a clean, mild taste. Fillets should look white to pale pink and smell fresh. If you can only find frozen fillets, thaw them overnight in the fridge and pat them very dry before soaking.
How to Make Air Fryer Catfish
1. Soak in Buttermilk
Pat the fillets dry, then leave them in the buttermilk for 15–30 minutes. The soak mellows any earthy flavor and gives the coating something to cling to.
2. Mix the Coating
In a shallow dish, combine the cornmeal, flour, salt and all the spices.
3. Coat the Fish
Lift each fillet, let the extra buttermilk drip off, then press it firmly into the cornmeal mix on both sides. Set the coated fillets on a plate for 5 minutes so the crust sets.
4. Spray Well
Lightly oil the basket. Lay the fillets in a single layer and spray the tops until you can no longer see any dry flour.
5. Air Fry
Cook at 200°C / 400°F for 5–6 minutes, flip gently with a wide spatula, spray the second side and cook another 5–6 minutes. The catfish is done when it flakes easily with a fork and reaches 63°C / 145°F inside.
- Dry spots of cornmeal stay powdery, so spray every part of the coating before and after flipping.
- Use a wide, thin spatula to flip; catfish is soft and can break apart.
- Fish is safe to eat at 63°C / 145°F, when the flesh turns opaque and flakes.
- If anyone in the house has a fish allergy, wash the basket well before cooking other foods.
Cornmeal or Flour: Which Coating Is Best?
Fine cornmeal gives the slightly gritty crunch people expect from catfish. Flour on its own gives a softer, smoother crust. Mixing both, as here, gives a coating that sticks well and still crunches. Panko works too if you like a lighter, flakier finish, similar to our Air Fryer Cod.
Why Does the Coating Fall Off?
There are usually three reasons. Too much buttermilk left on the fish turns the cornmeal to paste. Flipping too early, before the first side has set, tears the crust. And a basket that was not oiled lets the coating glue itself to the metal. Drip, press, wait the full first 5 minutes and oil the basket, and the crust stays where it belongs.

What to Serve With Catfish
Serve air fryer catfish with coleslaw, hush puppies or crispy Air Fryer French Fries. Tartar sauce, hot sauce and lemon wedges are the classic extras, and leftover pieces make very good fish tacos the next day.
