Air Fryer Popcorn Chicken – Crispy Bite-Size Chicken in 12 Minutes
Air fryer popcorn chicken cooks at 200°C / 400°F for 10–12 minutes, with a shake halfway through. The small pieces turn golden and crunchy on the outside and stay juicy inside, using a light spray of oil instead of a pan of hot fat.
Popcorn chicken is the kind of food that disappears fast, whether it is in a lunch box, on a game-night plate or in a bowl in the middle of the table. This homemade version uses the classic flour, egg and panko coating. It takes a little longer than opening a frozen bag, but you know exactly what is in it, and the crunch is better.

How to Make Air Fryer Popcorn Chicken
1. Marinate
Soak the chicken pieces in the buttermilk with a pinch of salt for at least 15 minutes, or up to a few hours in the fridge. It keeps the meat tender and seasons it all the way through.
2. Set Up the Coating
Mix the flour with half the spices in one bowl, beat the eggs in a second and mix the panko with the rest of the spices in a third. Line them up in that order.
3. Coat the Chicken
Drain the pieces, then dip each one in flour, then egg, then press it into the panko so it sticks on all sides. Using one hand for the wet bowl and the other for the dry ones stops your fingers getting thickly breaded too.
4. Air Fry
Arrange in a single layer, spray well with oil and cook at 200°C / 400°F for 10–12 minutes. Shake halfway and spray any pale, dry spots.
5. Check and Serve
The chicken is done when it is golden and the inside of the largest piece reaches 74°C / 165°F. Serve hot with your favorite dip.
- Chicken must reach 74°C / 165°F inside.
- Cut pieces to the same size so they cook evenly.
- Do not crowd the basket; cook in batches if needed.
- Spray any dry flour patches with oil so they brown instead of staying white.
Why Size Matters
Popcorn chicken works because the pieces are small, around 2 cm. That gives a lot of crunchy coating for each bite of meat, and the chicken cooks through before it has a chance to dry out. If some pieces are twice the size of others, the small ones will be overdone by the time the big ones are safe, so take a minute to cut them evenly.
Best Dipping Sauces
- Honey mustard: equal parts honey and Dijon mustard.
- Spicy mayo: mayonnaise with sriracha and a squeeze of lime.
- Ranch: cool and creamy against the crunchy coating.
- Sweet chili: for a sweet and spicy finish.
Tips
Popcorn Chicken vs Nuggets and Tenders
Popcorn chicken uses smaller, bite-size pieces, so it cooks faster and has more crunch in every bite. For bigger pieces, see our Air Fryer Chicken Tenders or the classic Air Fryer Chicken Nuggets.
Make Ahead and Freeze
You can coat the chicken, lay the pieces on a tray and freeze them until solid, then pack them into a freezer bag for up to 2 months. Cook straight from frozen at 200°C / 400°F for 12–14 minutes, shaking halfway, until the center reaches 74°C / 165°F. It is a handy way to have homemade popcorn chicken ready on busy evenings.
