Easy Air Fryer Seekh Kebab – Juicy Beef or Mutton Kebabs Without a Grill

Beef or mutton air fryer seekh kebab cooks at 200°C / 400°F for 10–12 minutes. Chicken seekh kebabs take 12–14 minutes and frozen ones 14–16. The mince should reach 71°C / 160°F in the center.

Seekh kebabs are a fixture at BBQ nights and dawats in Pakistan and India. This version brings the same spiced, juicy kebab home without a charcoal grill.

Why Kebabs Break and How to Prevent It

A kebab that falls off the skewer almost always has too much water or too little binding.

  • Squeeze the onion dry. Grated onion carries a lot of liquid; wring it out in a cloth.
  • Use mince with some fat. Very lean mince cooks up dry and crumbly.
  • Knead well. Working the mixture makes it sticky enough to hold.
  • Chill before shaping. Cold mixture is firmer and easier to press onto skewers.

Shaping and Cooking the Kebabs

1. Squeeze the Onion

Grate the onion and squeeze out all the liquid in a cloth. Wet onion makes the kebabs fall apart.

2. Mix the Kebab Mince

Combine the mince with onion, ginger garlic paste, green chilies, coriander, mint, all the spices, salt, and besan. Knead for 3–4 minutes until sticky.

3. Rest the Mixture

Cover and refrigerate for 20–30 minutes so the flavors blend and the mixture firms up.

4. Shape the Kebabs

With wet hands, shape the mince into 8 long kebabs around skewers, or into long rolls without skewers.

5. Air Fry

Place in the basket, brush with ghee, and cook at 200°C / 400°F for 10–12 minutes, turning halfway.

6. Check Doneness

The air fryer seekh kebab is ready when browned and the center reaches 71°C / 160°F.

7. Serve

Brush with a little more ghee, squeeze over lemon, and serve with naan, onions, and chutney.

Important Information
  • Minced meat must reach 71°C / 160°F in the center.
  • Squeeze the onion very dry; extra water makes kebabs break.
  • Use mince with some fat; very lean mince gives dry kebabs.
  • Make sure skewers fit inside the basket without touching the heating element.

Smoky Flavor (Dhungar)
For a smoky taste, place a hot coal in a small foil cup inside a covered bowl with the kebabs for 2 minutes after cooking.
